Strawberry Vanilla Bean Ice Cream
HALLELUJAHHHHHHHH! The angels are singing, harps are being strummed, and there's rainbows and magical unicorns dancing around me right now, pooping all over the floor. But it's totally cool, because it's rainbow unicorn poop, and I'm ok with it.
How's that for an opening line comeback?! The reason why angels are singing and unicorns are pooping is because this is my first new recipe in ohhhhh, I don't knowwww.....7 MONTHS. And honestly, I haven't even thought much about recipe testing in almost a year! Remember when I was stock piling all of those beautiful recipes so I could just enjoy maternity leave and not worry about using my brain? That was marvelous, and probably one of the best decisions I ever made lol. Turns out, my brain needed a little extra time to recover from the craziness that is two children, but never fear-I'm back and look at how much fun we're having!
Let's briefly recap the last almost year, shall we? I delivered my beautiful daughter, Camille in an amazingly redemptive way with a midwife, in the water, just like I hoped for...and ok, let's be real, it HURT LIKE A MOTHER, but it was nothing compared to my first, and I am so grateful for that! I survived the fourth trimester with my sanity..quite literally! My first postpartum experience was rocky, and although I had the normal emotional ebbs and flows, I felt 1000 times better this go round, thank goodness!
We moved 2 weeks after Camille came earthside, I started a new role in my company 3 months post partum. Bear started a new wonderful school. Tim started his new job. And basically for the last 8 months since then, we've just been busy keeping ourselves, our kids, and our new giant rescue dogs alive and as well as can be expected.
Most recently, if you've been following along, I rebranded my site from Paleo-ish to Hold the Space Wellness and I'm now @jess.holdthespace on Instagram! I also launched a podcast with my beautiful instagram-turned-real-life friend Laura from Radical Roots called The Modern Mamas Podcast where we talk about all things pregnancy, fertility, preconception, and parenthood with a specific focus on nutrition, fitness, and radical SELF LOVE baby. Stay tuned, because that badass lady and myself (me? I don't do grammar, Laura would know, I hope she reads this and tells me) have super amazing, big plans for fun and exciting SECRET things ahead!
Future plans for me include studying for my Holistic Nutrition Consultant Certification AND attending and applying to be a BIRTHFIT coach, which is something I'll do a completely separate post on at a later date because it's just such a beautiful thing!
Talk about an update, huh?! I'm sure I'm leaving out about 52 thousand things, but that's the basic gist of it, ya' hurd? Oh my god, why do I try and be cool? It's so embarrassing. Yet not THAT embarrassing or I would just go back and delete that sentence....but I AM in the process of this whole showing my authentic self, and well, THAT'S ME--super nerd and all, take it or leave it folks.
So we all know why you've stuck with this long and tedious update, and that's because I tricked you and titled this blog post STRAWBERRY VANILLA BEAN ICE CREAM, which is what you thought I would be talking about, isn't it? GOTCHA SUCKAS. Just kidding, you aren't "SUCKAS", but I did GETCHU!!! There's not much to say about this ice cream except that I wanna have those angels and pooping unicorns spoon feed it to me while I lounge about in this 96 degree Texas weather and do nothing. IT'S SO FREAKING GOOD. Sweet, with a hint of tart, and so creamy! Plus, the secret ingredient that makes it so out of this world is the Wild Vanilla Powder from Wild Foods, it takes the vanilla flavor to an 11! Now go make it!
