Easy Baked Carrot Fries
Sometimes I like to act like I eat things other than dessert. Prime example, these Carrot Fries which are, in fact, EASY. Because let's be honest, food that is hard, SUCKS. And that just ain't happening' round here, ya heard?!
I love to have a starchy carb with every meal, but with white potatoes being off the table due to nightshade issues, my old pal, the sweet potato is becoming less and less appetizing at every. single. meal. Enter carrots. These little veggies are so versatile, it's a wonder I don't use them more often in my meals! I'll be honest, sometimes that added step of having to PEEL them, just annoys the crap out of me, but I promise you, these are worth it! Just like a sweet potato, but better, in my opinion!
I guess I'm the only person on planet Earth not on the Keto train, but as intrigued as I am by it, I've found that while nursing and pumping, my body needs carbohydrates in a good amount to support a really healthy supply. So for now, I love having sides like these to satisfy that need!
