Dark Salted Caramel Sauce
You know when you stumble across something by happy accident, and you just can't believe your luck?? That was me and this freaking caramel sauce. I need a quick caramel like sauce for a food photo shoot, and I had no idea what to do..every recipe I could find involved some sort of double boiling, and too many ingredients, and just NO.....the inspiration came when I spotted this tiny can of Native Forest Coconut Cream I'd been hoarding for a rainy day (seriously this can was the perfect dessert size, found at Whole Foods). Saw the cream, had some grass-fed butter on hand, so of course I found a way to make it in minutes via the microwave! If microwaves aren't your jam, I'm sure you could make this via stove stop methods, but I haven't tried it, if you do let me know how it goes!
Few tips, I like my caramel on the SALTY side, so I do use salted butter in addition to the added salt. Also, be sure to use an oversized bowl when microwaving as this concoction will have a tendency to bubble up when heating. It will take a bit to thicken up after heating, but also sticking it in the fridge will speed up the whole firming process if you need your caramel ASAP! This stores so wonderfully in the fridge, never hardened to the point I couldn't just pass by the fridge and take a big ol' spoonful. We ate this for days..dipped pieces of dark chocolate in it, strawberries, drizzled it over cake and ice cream and yogurt. I even tossed a few spoonfuls into my morning coffee for a sweet treat on occasion! So versatile! Hope you enjoy!
